Fluffy Oat Pancakes

Makes 5 Pancakes
Time: 20 Mins
Ingredients

Pancakes
1.5 Cups Oats
1 Vegan Egg (I used Follow Your Heart’s Vegan Egg but you can make a Chia Egg)
1/2 Cup Almond Milk
2 TSP Maple Syrup
2 TSP Baking Powder
A Pinch Salt
1 TSP Vanilla Extract
1/4 TSP Cinnamon Powder
2.5 TBSP Coconut Oil

Toppings
1/4 Cup Coconut Yogurt
1 Banana
1 Cup Mixed Berries
1 TBSP Maple Syrup

Method

To make the Oat Flour, Grind Oats into a Fine Flour in a Food Processor, and make your ‘Egg’.
In a Large Bowl, combine Oat Flour, Baking Powder, Salt, Cinnamon Powder and mix thoroughly.
Add Vegan Egg, Almond Milk and Maple Syrup and stir to combine.
In a Pan melt Coconut Oil (approx 1/2 TBSP per pancake) and when the pan is hot ladle 1/5th of the mixture into the pan and move it around to create a thin circular pancake shape that’s around 1cm thick. 
When Bubbles begin to form, use your spatula to flip over and cook evenly.
Repeat with the rest of the mixture.

Serve with a generous drizzle of Maple Syrup, a Scoop of Coconut Yogurt (or vegan whipped cream) and your favourite fruits!
