Grilled Peaches on Toast

Makes:  2
Time: 10 Mins
Ingredients

1 Peach
1 TSP Maple Syrup
1 TBSP Coconut Oil
3 Basil Leaves (roughly chopped)
1 TBSP Balsamic Vinegar Glaze
1/2 Cup Vanilla Coconut Yogurt
Dash of Cinnamon Powder
2 Slices Sourdough Bread

Method

Thinly Slice your Peach into 10 Pieces.
On Medium Heat melt Coconut Oil in a griddle pan. Once hot lay Peaches on pan and and drizzle half the Maple Syrup over them.
Sear for 3 minutes and repeat with remaining syrup on the other side.
While your peaches are grilling, toast your slices of Sourdough and plate.
Cover Sourdough with a generous helping of your Coconut Yogurt (around 1/4 Cup per slice) and add a dash of Cinnamon Powder on each slice.
Once Peaches are ready, carefully place 5 slices on each piece of Toast, the add your basil and finish with a generous drizzle of your Balsamic Glaze.
Serve Immediately.
