Pasta Pomodoro

Serves: 2
Time: 70 Mins
Ingredients

1 TBSP Olive Oil
3 Cloves Garlic
1/4 TSP Dried Chilli Flakes
1/2 TSP Dried Oregano
1/2 TSP Dried Basil
1/2 TSP Onion Powder

1 Can Tinned Tomatoes
1/2 Cup Hot Water

2 Portions of your favourite Pasta Cooked
(Reserve 1/2 Cup of the Water from Boiled Pasta on the side)
1 TBSP Fresh Basil
1 TBSP Vegan Butter
1 TBSP Nutritional Yeast

Black Pepper

Method
Add your Olive Oil to a hot pan with Crushed Garlic Cloves, Dried Chilli Flakes, Dried Oregano, Dried Basil and Onion Powder
Cook  over low heat for 5 mins so that the flavours can be released.


Add Tinned Tomatoes, 1/2 Cup Water and Simmer covered for up to One Hour. 
During this you can proceed to cook your pasta in salted and oiled water and drain, saving a 1/2 Cup of the Pasta Water on the side.

Once Sauce has simmered for an hour add 1/2 Cup of Pasta Water and Pasta and stir, adding a Handful of Chopped Fresh Basil and the 
Vegan Butter. 
Add the Nutritional Yeast, stir through and season with Salt and Black Pepper to taste.
Plate Pasta with a pinch of  Nutritional Yeast and Fresh Black Pepper with a few leaves of Basil before serving!
